Peel, dice and roast Golden and or Red Kumara
Fry up Bacon bits
Equal measures (1Tablespoon each) of:
- Dijonaise mustard
- White wine vinegar
Add in 3-4 Tablespoons of extra virgin olive oil in a slow stream while whisking the first 3 ingredients.
Adjust blend to taste.
Combine Kumara and Bacon and stir dressing through just prior to serving.
