Microwave Lemon Honey

In a large microwave jug

½ Cup Lemon Juice

75 g Butter

Cook on high for 1 ½ mins. This pretty much melts the butter but it doesn’t matter if it is not quite all melted. 

1 ¼ Cup Sugar

2-3 tsp grated Lemon rind

4 eggs


Whisk in Lemon rinds and Sugar

Add eggs and whisk well.

Cook on high for 7 mins (you may want to stop in the middle and give it a bit of a stir).  I use a 2L jug, you don’t want it to be too small or it will overflow.

Whisk well for 1 – 2 mins (used an egg beater)

Can be put into preserving jars but ours goes into the fridge and is long gone before it gets a chance to go off.
